Cut of the week – Lamb Shanks

Recipe: Braised Lamb Shanks
 
Ingredients:
– 4 lamb shanks
– 2 tablespoons olive oil
– 1 onion, finely chopped
– 4 garlic cloves, finely chopped
– 2 carrots, peeled and finely chopped
– 2 celery stalks, finely chopped
– 2 cups beef or chicken stock
– 1 cup red wine
– 2 sprigs fresh rosemary
– Salt and pepper to taste
 
Instructions:
 
1. Preheat your oven to 160°.
 
2. Heat the olive oil in a large, oven-safe pot over medium-high heat. Add the lamb shanks and brown them on all sides, about 5 minutes per side.
 
3. Remove the lamb shanks from the pot and set them aside.
 
4. Add the onion, garlic, carrots, and celery to the pot and cook until they are softened, about 5 minutes.
 
5. Add the stock, red wine, and rosemary to the pot and bring to a simmer.
 
6. Return the lamb shanks to the pot and spoon some of the liquid over them.
 
7. Cover the pot with a lid or foil and transfer it to the oven.
 
8. Bake for 3 hours, or until the meat is tender and falls off the bone.
 
9. Remove the pot from the oven and use tongs to transfer the lamb shanks to a serving platter.
 
10. Strain the liquid from the pot into a separate bowl, then return it to the pot and place it over medium-high heat.
 
11. Bring the liquid to a boil and cook until it has reduced by about half, about 10-15 minutes.
 
12. Spoon the reduced sauce over the lamb shanks and serve immediately on a bed of mash potato or rice.
