Lamb Shank and Mashed Potatoes Recipe

Ingredients

2 lamb shanks
2 tablespoons olive oil
Salt and pepper, to taste
1 onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
3-4 cloves garlic, minced
1 cup red wine (such as Cabernet Sauvignon)
2 cups beef or vegetable broth
2 sprigs fresh rosemary
2 sprigs fresh thyme
4 large potatoes, peeled and diced
1/2 cup milk or heavy cream
4 tablespoons butter
Salt and pepper, to taste

Instructions

For the Lamb Shanks

1. Preheat the oven to 325°F (160°C).
2. Season the lamb shanks generously with salt and pepper.
3. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.
4. Add the lamb shanks and sear on all sides until browned. Remove and set aside.
5. In the same pot, add the chopped onion, carrots, and celery. Sauté for a few minutes until the vegetables start to soften.
6. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
7. Pour in the red wine and let it simmer for a few minutes to reduce slightly.
8. Return the lamb shanks to the pot. Add the beef or vegetable broth, rosemary, and thyme sprigs.
9. Cover the pot with a lid or aluminum foil and place it in the preheated oven.
10. Cook for about 2.5 to 3 hours or until the lamb is tender and easily pulls away from the bone.

For the Mashed Potatoes

1. While the lamb is cooking, place the diced potatoes in a large pot of cold, salted water.
2. Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes.
3. Drain the potatoes and return them to the pot.
4. Add the milk or heavy cream and butter to the potatoes.
5. Use a potato masher or a hand mixer to mash the potatoes until smooth and creamy. Add more milk or cream if needed.
6. Season with salt and pepper to taste.

To Serve

1. Once the lamb shanks are done cooking, remove them from the pot and keep them warm.
2. Strain the cooking liquid and vegetables from the pot, discarding the solids.
3. You can choose to serve the lamb shanks whole or shred the meat from the bone.
4. Plate the lamb shanks on a bed of mashed potatoes and drizzle with the strained cooking liquid.
